This pasta with shrimp and spinach is all you need after a long day at work.
I rarely buy shrimps so I wanted this experiment to be a success immediately. Of course I already knew I couldn’t fail because it’s a really simple pasta recipe.
All the “in your pantry” ingredients are pretty much optional, just remember to add spices or herbs, or the taste will be very plain. You can substitute lime with lemon or even omit it. Between all the condiments and spices I would advise to keep at least garlic (and chilli, if you like it).
Positive: A complete meal ready in 15-20 minutes!
Negative: You need to have some spices at hand to give a real kick to your pasta.
Ingredients (for 2):
- 200 g linguine
- 165 g fresh raw shrimps
- Frozen spinach (5 cubes)
In your pantry:
- Juice of 1/2 fresh lime
- 1 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- 1 teaspoon chilli flakes
- Salted butter/ or olive oil
Cook your pasta as indicated on packaging.
3 minutes before the end (check cooking time of your frozen spinach) add spinach to the pasta.
In the meantime, melt a generous slice of butter in a frying pan.
Add all the spices then cook shrimps 1-2 minutes on each side on medium heat. (Don’t overcook them!) Add lime juice.
Drain pasta and spinach when ready, making sure to extract as much water as possible from the spinach.
Add pasta and spinach to the pan with shrimps and toss it to combine the flavours.
Serve immediately with grated parmesan cheese.
My advice: Don’t overthink it. This recipe can’t go wrong. Unless you forget the shrimps on the fire because some neighbours are unexpectedly knocking at your door in that moment (it almost happened to me… but it didn’t!).
