This orzo recipe is seriously tasty and don’t take more than your pasta cooking time (including water boiling time) so it’s perfect for a last minute dinner but also makes a great lunch box to bring to work.
Ingredients (serving 1-2):
- orzo pasta
- red pepper (half)
- chorizo (6 slices)
- fresh basil leaves x5
Bring a pot of salted water to boil and cook orzo as indicated on packaging.
In the meantime, wash and cut red pepper into small dice. Cut chorizo into dice as well. Wash basil leaves and pat them dry, then chop them.
Heat some olive oil in a pan and sauté red pepper for about 5 minutes until tender. When orzo is ready and drained, add chorizo to the red pepper pan and stir for 1 minute on medium heat. Add orzo and stir well to mix all the flavours.
When serving, add chopped basil to the plate and eat immediately.
