Baked Apples Stuffed with Goat Cheese and Thyme

Baked apples stuffed with goat cheese, thyme and a hint of honey. How do you say no?

I would eat it at least once a week if goat cheese was a bit less… expensive. And I’m a huge fan of goat cheese. My mum still buy some every time I visit her in France. For some reasons, even in Italy where they have plenty of different types of cheese, goat cheese is not so common, and now that I’m in the country of cheddar :) I can find it but it’s expensive. I just have to visit my mum more often!

Positive: 5 minutes to prepare, 20 minutes to bake. An original starter to use extra apples.

Negative: I’m not suggesting any variations for this recipe, sorry. I think apple, goat cheese, thyme and honey is the BEST combination here.


Ingredients:

  • apple
  • goat cheese (2 tsp for half apple)
  • thyme

In your pantry:

  • honey
  • salt, pepper

Recipe:

Preheat oven at 180°C.

Wash apples. Cut in half and using a spoon (your sharpest one preferably) scoop out carefully the core like in the pictures.

You also want to cut a slice at the bottom of each apple so it won’t roll over.

Now fill each apple with goat cheese. I used 2 teaspoons of fresh goat cheese for each half apple, then I spread it on top to cover the whole apple.

Sprinkle generously with ground black pepper and thyme. Add a drop of honey on top of each apple.

Bake in oven at 180°C for about 20-25 minutes. Goat cheese will get a nice golden crust.

Serve with a drizzle of olive oil on a bed of rocket salad.

My advice: Although it is truly delicious, fresh goat cheese has a very subtle flavour, you might want to try with aged goat cheese for a stronger flavour.
