Red lentil and courgette patties

How to cook red lentils? Red lentils are a great source of protein, vitamins, fiber and iron. They are good for you! That’s why I always have some at home, but I honestly never know what to do with it. And that’s why I’m really proud of this experiment: it is seriously super tasty. You MUST give it a try!

Positive: Packed with proteins, veggies and grains so they’re not only tasty they will also fill your stomach. Recipe approved by my toddler too.

Negative: A little bit of frying is involved…


  • 1 courgette
  • 100 g red lentils
  • 50 g oatmeal

In your pantry:

  • 2 tablespoons gram flour (chickpea flour) or plain flour
  • vegetable broth (powder or cube)
  • breadcrumbs (optional)
  • oil


Heat two spoons of oil in a large pan, add 1 glass of red lentils (100 g) and 2 and 1/2 glasses of water (= 2.5x lentils volume) and add about a teaspoon of broth. Bring to a boil then reduce to low heat and cook for 10 minutes or until lentils has absorbed all the  water.

In the meantime, wash and cut courgette into tiny dice.

Heat some oil in a pan and cook courgette dice for 5 minutes. (You do see some red onions in the picture below. I had to use mine. I would say if you have it use it.)

When lentils are cooked, add a glass of oatmeal (50 g), courgette dice and stir well.

Add some gram flour if you have, or just normal white flour, because it will help the patties hold better together. I made some of them without any flour and it was still very good though.

Wet your hand and shape small balls with your preparation and flatten them gently.

Optional but for more crunchiness: add breadcrumbs (or flour) to a dish and dip your patties making sure they’re coated on each side.

Heat 3 tablespoons of oil in a frying pan and cook your patties for about 3 minutes on each side on medium-high heat or until golden brown.

Serve with salad and lime slices. Yum…!

My advice: I usually love to add some paprika to the breadcrumbs, it adds a smokey flavour and a nice colour, but you could also add dried herbs.

Instead of courgette you could try to use carrots or bell peppers.

Don’t hesitate to season the preparation with garlic or fresh herbs like rosemary or spices of your choice.
