Baked salmon en papillote [in foil parcel]

“En papillote” is my favourite way to cook fish. It’s healthy, the fish doesn’t require oil and doesn’t dry out. You don’t have to watch, 20 minutes in oven is always perfect.

Positive: 3 ingredients, 2 minutes of preparation, 20 minutes of oven baking.

Negative: Unless you hate mustard, this dish is fantastic.

Ingredients for 2:

  • 2 salmon fillets
  • 2 tablespoons whole grain dijon mustard
  • 2 tablespoons crème fraîche


Preheat oven at 180°C.

Prepare two big rectangles of aluminium foil. Place each salmon fillet on a rectangle.

In a small bowl, mix crème fraîche and mustard. Using a spoon cover the fillets with the creamy sauce. You DON’T NEED to season.

Wrap tightly and place in oven for 20 minutes.

My advice: This recipe is absolutely delicious. Best served with a side of steamed potatoes, rice or green beans.
