Cucumber mint salad

Cucumber, cream and mint! Another perfect summer salad, savoury and refreshing.

Positive: Crunchy and creamy. Healthy and even healthier if you want to use yogurt instead of cream.

Negative: If you don’t like it, don’t eat it. More for the others. :)


Ingredients for 1-2:

  • 1 cucumber
  • 8 mint leaves
  • 10 cl cream

In your pantry:

  • evo oil
  • vinegar/ or lemon juice
  • salt, pepper

Recipe:

Peel cucumber and cut it thinly into slices.

In a large bowl, add cream, season with salt and pepper, add drizzle of olive oil, a bit of lemon juice (or vinegar). Chop up mint very thinly and add it to the creamy sauce. Stir well.

Pour the creamy sauce over the cucumber and serve very cold.

My advice: You could make a different version by cutting cucumber in half slices or cubes and either chopped red onions or cherry tomatoes.
