To make these delicious Chinese pancakes you need only scallions (green onions) since all the other ingredients are basic ingredients. I’ve seen so many different recipes I decided to try my own version.
Positive: It does taste of Chinese food! You can also make it vegetarian using vegetable broth.
Negative: The dough might remain sticky so you have to constantly add some flour to shape it into small disks.
- 1-2 scallions (only the green part)
- 1 tablespoon beef broth (you can use chicken broth or vegetable broth if you prefer)
In your pantry:
- 200 g flour
- 125 ml of water
- oil for frying
In a bowl, combine flour, broth and salt.
Bring water to a boil then pour it slowly over flour while stirring. Knead the dough a few minutes until it becomes soft. Add flour if it remains sticky. Cover with a cloth and let it rest (I waited only 15 minutes).
Wash green onions and cut thinly into tiny circles (only the green part), then add to the dough and combine well using your hand.
Divide dough into 8 balls. On a floured surface, using a rolling pin start flattening each ball at a time into a thin disk.
Cover the bottom of a small skillet (about the size of your disk or slightly bigger) with oil and bring it on med-high heat. [Make sure it is hot enough to fry by placing a piece of scallion into the skillet: it should make bubbles and noise].
Start frying one pancake for about 1 minute or when edges become slightly golden, then flip it over and fry the other side for another minute. Place on a plate with paper towel (to absorb excess of oil) and repeat these steps with remaining pancakes.
Enjoy immediately while warm!
My advice: This is a great discovery. Best served immediately.
