A chocolate cookies recipe with only 4 ingredients and no eggs deserves a try.
Positive: Very easy and quick to make! Light and crunchy.
Negative: Usually I like my cookies with a more pronounced chocolate flavour, but I think my cocoa powder was just not bittersweet enough (I didn’t have Van Houten). I would either add another spoon or chocolate chips.
- 2 tablespoons bittersweet cocoa powder (like Van Houten)
- 100 g butter (softened)
- 50 g icing sugar
In your pantry:
- 125 g flour
Since your butter needs to be soft creamy-like, you can either take it out of the fridge one hour before or place it 10-15 seconds in the microwave.
Mix together all the ingredients and make a ball. If the consistency is still too powdery, it means your butter is too hard so you can place the mixture a few seconds in the microwave.
Give your ball the shape of a sausage (about 3 cm of diameter) and place it in the fridge while preheating oven to 180°C (10-15 minutes).
Cut your “chocolate sausage” into slices (about 1 cm) and place them on a baking tray covered with parchment paper. Make sure to leave enough space between them as they will spread.
Bake in oven for about 12 minutes and leave to cool on a grill.
My advice: Not too sweet, they are perfect for breakfast!
