Duchess potatoes

Duchess potatoes are like the cutest way to eat potatoes! They are so classy that you want to keep them for special occasions.

Positive: A cheap and original way to eat potatoes. They come out light and fluffy!

Negative: You need to find something to make with the egg whites and it’s a little bit long to make.


  • 400 g potatoes (3-4 small potatoes)
  • 30 g butter
  • 2 egg yolks


Prepare mashed potato. Peel and wash potatoes and place them in a pan with cold water. Bring to a boil. When water is boiling, cover and cook for about 20 minutes until potatoes are tender. Mash potatoes carefully (you don’t want small chunks that will block your pastry bag!).

Mix in egg yolks and butter until butter has melted and mixture is smooth. Season with salt and pepper.

Next, transfer mashed potatoes to a pastry bag (with a star piping tip) and pipe round mounds onto a baking tray covered with parchment paper.

Place in preheated oven at 200°C for about 30 minutes until they are light golden brown.

My advice:

They look fancy but in the end they are really easy to make.
