Today broccoli bites! And before to make a face, it could finally be the recipe that will make you like broccoli. (Personally I love them!)
Positive: Gluten-free, vegetarian and a cool way to eat broccoli!
Negative: Fried (so not so healthy but hey you can’t have it all), but you could also try to make them in oven!
- 2 small broccoli
- 2 eggs
- 8 tbspoons gram flour (or flour of your choice)
Bring a large of water to boil. Wash broccoli, separate heads and cook them for 10 minutes in the water with salt. Drain and purée with a hand blender.
Add eggs, flour and season with salt and pepper. Combine all the ingredients until smooth.
Pour 4 spoons of oil (2 evo oil and 2 sunflower oil, or just seed oil) in a large skillet and place on medium heat. When oil is hot, drop a tablespoon of the purée and press lightly. Repeat with the remaining purée until skillet is full, then add some more oil for the next ones if needed. When your broccoli bites turn a nice golden colour, place them on a plate cover with paper towel before to serve.
My advice: These broccoli bites could be done in many ways, just pick yours:
- with another flour (corn, almond or wheat flour),
- with roughly smashed broccoli instead of purée,
- by adding spices (curry for example)
- served with melted cheese on top (oh yes, I tried that one… yumm!)
