So what happened? I had oatmeal at home for the first time because I’ve been making my own muesli (yogurt, oatmeal, flaxseeds, raisins and brown sugar… yumm!) so I looked out what else I could make with oatmeal… and after the banana flaxseeds crackers, I found how to make banana oatmeal cookies (original recipe here).
Positive: You can add anything you want! (I made 4 types: -nature, -walnut, -raisins, -cinnamon), they are tasty plus you don’t feel guilty eating them!
Negative: Chewy consistency. Like banana pancakes don’t taste of pancake, well banana oatmeal cookies don’t taste of traditional cookies.
Ingredients (for 26 small cookies):
- 2 ripe banana
- 45 g oatmeal
- optional: cinnamon, walnuts, raisins, chocolate chips, cocoa powder, cranberries,…
Preheat oven at 180°C.
In a deep plate, mash bananas. Add oatmeal and combine until smooth. Add ingredients of your choice. Cover a baking tray with parchment paper. Drop mixture using two spoons on the baking tray to make small cookies.
Bake for 15 minutes, cookies should be slightly golden.
My advice: after my experiment (I love experimenting with food!) here is my ranking:
- 4- banana + oatmeal: only taste of banana (yeah, it was to be expected)
- 3- banana + oatmeal + raisins: bring some sweetness
- 2- banana + oatmeal + walnuts: bring some crunchy
- 1- banana + oatmeal + cinnamon: love it!
I didn’t try with chocolate because I have been eating a lot of it lately (I know, you can never eat too much chocolate… or can you?) and it always win too easily in this kind of experiment…
