Pork chops with apple and sage is my new favourite way to eat pork chops. The apples are delicately sweet and sour and go perfectly with the meat.
Positive: Pretty easy and pretty cheap for a stylish dinner.
Negative: Hmm… nope, nothing I can think of.
- 2 pork chops
- 1 apple (Gala)
- fresh sage
In your pantry:
- salt, pepper
- evo oil
Season pork chops with salt and pepper then sprinkle some flour on both sides.
Wash and cut apple into slices (but leave the skin on).
Heat a skillet with olive oil on medium heat. Add pork chops and cook a few minutes with chopped sage leafs on both sides until golden brown. Put them on a plate.
Add immediately apple slices to the skillet with a spoon of sugar and a bit of salt. Allow the apple slices to caramelise for about 2 minutes. Add either some water or vinegar (apple vinegar is best) to deglaze the pan and stir well so the apple will get all the meaty flavours.
Place back the pork chops with apple slices until it finishes cooking (add a bit more water if necessary).
Serve with basmati rice.
My advice: You could also try with other fresh or dry herbs of your choice (rosemary, thyme,…).
