I had sweetened condensed milk leftover (after making the bounty bars) and after 2 days of research, I finally found a great recipe on misya.info, Flavia is always a great source of inspiration! Originally it’s a 2 ingredients recipe, but if you add cocoa powder to half of the preparation, you obtain 2 types of biscuits with 3 ingredients!
Positive: Gluten-free, super easy, perfect for a quick snack.
Negative: Nothing to add.
Ingredients (for about 20 biscuits):
- 200 ml of sweetened condensed milk
- 100 g shredded coconut
- 3 teaspoons of bittersweet cocoa powder (optional)
Preheat oven at 180°C.
In a large bowl, combine condensed milk and shredded coconut using a spoon. Divide the mixture in two part. Shape half of the mixture in your hands into small balls and set them on a baking tray covered with parchment paper. Make sure to leave enough space between them as they will spread slightly in the oven.
Add cocoa powder to the rest of the mixture and mix well. Then shape the remaining mixture into small balls on the baking tray. Place in oven for 8-10 minutes. As soon as the white ones are lightly patched with golden brown, they are ready.
My advice: I wouldn’t buy sweetened condensed milk or shredded coconut to make these, but it’s a great recipe to use leftovers. (Although I forgot a bit my biscuits in the oven, they were a bit crunchier than planned… but still delicious!)
