Imagine that you absolutely need a snack and outside there is a pouring rain. Make sure to always have bananas and seeds at home.
Positive: Perfect for a quick snack or for breakfast; healthy, sweet (as much as your banana is).
Negative: I haven’t found a salty version yet.
- 1 ripe banana
- flax seeds
Peel the banana and mash it with a fork in a bowl. Add flax seeds and mix. To be sure you added enough flax seeds remember that you should obtain a thick puree consistency.
Cover a baking tray with parchment paper and grease it slightly with olive oil (using a brush or your hand). Drop a teaspoon of the mixture on the baking tray and press flat (you can use a cookie cutter if you have it).
Bake in preheated oven at 180°C for about 15-20 minutes. They should be ready when the edges are brown.
My advice: I tried a bunch of them adding also sesame seeds (yummy! See photo below). You could definitely try with different kind of seeds like pumpkin or sunflower seeds.
Make sure your oven is preheated and your crackers are as flat as possible to get them super crunchy.
