Banana pancakes

I wanted to have them since I heard Jack Johnson…

Positive: Only 2 ingredients to make these great looking pancakes! They also make a tasty and consistent breakfast.

Negative: It doesn’t taste like pancake at all! Hahaha. But as long as you like banana you have nothing to fear.


Ingredients:

  • 1 ripe banana
  • 2 eggs

Recipe:

Peel the banana and mash it with a fork. Whisk eggs together and pour them in a bowl with the banana. Stir until the eggs are completely combined.

Heat a frying pan over medium heat (you might need a little of vegetable oil to prevent sticking unless you can really rely on your pan) then drop a spoon of the batter to form a small pancake. If the pan is hot enough it should sizzle immediately, if not, turn up the heat slightly. Cook for about 1 minute until the bottom turn a brown and gold colour, then flip it and cook for another minute or so.

Repeat these steps until you finish the batter.


My advice: My third ingredient was a drizzle of honey on top of my pancakes, but you have plenty of options:

  • to add in the batter: cocoa powder – chocolate chips – fresh fruits – nuts – raisins…
  • toppings: maple syrup – jam – chocolate sauce – cream – icing sugar…
