Carrot and apple salad

Need something light for lunch? Try this carrot and apple salad.

Positive: Full of vitamins, this salad is original and very quick to make.

Negative: None.

Ingredients: 4 carrots – 1 granny smith apple – a few raisins

Recipe:

Peel carrots and grate them.

Peel apple, cut into quarters and core then grate and add to the carrots.

Add a handful of raisins and drizzle some evo oil. Season to taste with salt and pepper.

My advice: I added some orange flavoured oil (for the vitamin mix!) but you can also use a spoon of fresh orange juice instead of oil to make it super healthy.
