You want to eat crepes but your friend is allergic to gluten? Or maybe you just don’t have eggs anymore?
Positive: Delicious and fluffy with a nutty flavour, these crepes are incredibly easy to make.
Negative: If you wanted sweet crepes, I would not recommend them.
Ingredients (for about 5 crepes):
- 120 g gram flour
- 1 spoon of evo oil
- 270 ml water
Put chickpea flour in a large bowl. Add salt, pepper and evo oil. Combine ingredients with an electric mixer while pouring water slowly. Grease slightly a nonstick pan and heat it over medium heat. Pour a ladleful of batter on the hot pan and, like for crepes, distribute it evenly on the pan. Cook for about 2-3 minutes on the first side then only 1-2 minutes on the other side.
My advice: You can enjoy them with almost anything: cheese/ham/salad, spinach/ricotta, cheese/tomato, bolognese sauce, béchamel/mushrooms, …
